1 Garlic clove, crushed
1/2 Chopped red pepper
1 teaspoon Lemon Juice
1/3 Chopped courgette
6 Sliced olives Optional
Pinch Sea salt & black pepper
2 teaspoons Chopped parsley
1 teaspoon Olive Oil

    This easy chicken dish can be in the oven in 10 minutes. The vegetables, goat cheese and lemon juice make the chicken moist and flavoursome. Any vegetable that doesn’t take long to cook can be used, like spinach or mushrooms. It makes a great weeknight dinner and any leftovers are great with salad for lunch the next day.

    1. Preheat the oven to 200°C.

    2. Slice the chicken breasts open so that you are left with a large pocket.

    3. Mix the sliced vegetables with the cheese, olives, lemon juice, herbs, salt and pepper.
    4. Place mixture in the center of each chicken breast and press in well.

    5. Place the stuffed chicken in a roasting tin. A small tin that the chicken fits snugly is best.
    6. Brush the chicken with a little olive oil and sprinkle with sea salt and black pepper.

    6. Bake, uncovered, for 40 minutes, or until cooked thoroughly.
    7. Let rest for a couple of minutes.
    8. Carve into slices and serve with lightly cooked vegetables or salad.
