Directions
This easy chicken dish can be in the oven in 10 minutes. The vegetables, goat cheese and lemon juice make the chicken moist and flavoursome. Any vegetable that doesn’t take long to cook can be used, like spinach or mushrooms. It makes a great weeknight dinner and any leftovers are great with salad for lunch the next day.

1. Preheat the oven to 200°C. 2. Slice the chicken breasts open so that you are left with a large pocket. |

3. Mix the sliced vegetables with the cheese, olives, lemon juice, herbs, salt and pepper. |

5. Place the stuffed chicken in a roasting tin. A small tin that the chicken fits snugly is best. |
