Rind & juice from 1/2 Lemon

Optional 1-2 teaspoons Capers

Optional - 1 tablespoon or to taste Horseradish

Optional - 1 teaspoon Chopped Herbs of your choice

This can hardly be called a recipe because it is simply smoked mackerel, cream cheese and lemon juice mixed together to give a nutritious and tasty pâté to dip vegetable sticks in or to spread on thin wholemeal or oat crackers. It is also delicious in a mixed salad or packed lunch. It would also make a delicious dinner party starter in either individual little dishes or one dish in the centre of the table. You will need a smaller portion as a starter – 6 portions from this recipe. Serve with good quality toasted sourdough or thinly sliced wholegrain bread or crackers. Mackerel is a great source of Omega 3 healthy fat.
If you use peppered smoked mackerel, don’t go overboard with the flavourings!
It makes a very healthy low-carb snack when paired with vegetables for dipping:
Celery sticks
Sliced courgette
Sliced cucumber
Carrot batons

Mash all the ingredients in a bowl with a fork or use a stick blender or food processor if you want a smooth pâté. It will keep for up to 4 days in a lidded jar in the fridge. |
