Chilli and garlic add a kick to the kale which compliments the subtle flavor of the salmon.

Pre heat the oven to 200°C.

Brush a little olive oil onto a baking tray.

Cut the salmon into squares and place on the baking tray. Bake for 10-15 minutes, until they have changed colour, but not brown. If you wish you could grill the salmon pieces instead.

While the salmon is baking, wash and remove the tough outer sections from the kale. Place half a tablespoons of olive oil in a saucepan and heat. Place the kale in the saucepan. Add 3 table spoons of hot water. When the water begins to boil, turn down to maintain a simmer for 5 min.

Move the kale to the side of the pan and add a teaspoon of olive oil. Add the sliced garlic and chilli and sauté until cooked but not brown. Mix with the kale. Drain in a colander or large sieve.

To serve, scatter the kale around each plate and arrange the salmon and chille on top.
