180g Full Fat Cream Cheese Philadelphia is very good
175g Smoked Salmon Sliced
1 to 2 teaspoon Horseradish sauce To taste
1/2 teaspoon Dijon Mustard
1 tablespoon Fresh chives or dill
1 Sliced lemon For garnish & squeezing over the salmon

Smoked salmon is a good source of Omega 3 fatty acid which is lacking in western diets. Omega 3 is particularly important in relation to diabetes because it has been shown to improve the way cell receptors, including insulin receptors work.

The fat in the salmon & cream cheese slow the rate in which carbs from other foods are released into the blood stream, so this recipe is ideal for parties.

Steps

Done

Chop most of the chives or dill, leaving a few pieces for decoration. Mix the cream cheese, horseradish, mustard and chives/dill together in a bowl.

Slice the brown scones. Spread the cream cheese mix on the scones (or sliced bread if using). The nutritional value will depend on the type of bread you use.............unsweetened wholemeal bread is the best.

Place pieces of the smoked salmon on top of the cream cheese. Decorate with dill or chives. Add lemon wedges (not shown in picture).

Note: Smoked salmon contains salt (part of the smoking process) so I would recommend not eating other salty foods on the same day.
