1 Salmon Darn
1/2 tablespoon Wholegrain mustard To taste
1/2 Lime juice
1 small Red onion
1/2 Leek, sliced
5/6 slices Courgette
1/2 Red or yellow pepper

Preheat the oven to 200°C.

Place the salmon skin side down on a baking tray and spread the mustard on top. Squeeze the lime juice over the fish being careful not to knock off the mustard. If you add the lime juice first the mustard will slide off the fish!!

You can add spices or herbs at this stage if you wish.

Bake in the preheated oven for 25 to 35 minutes, depending on the size of the salmon darn.

While the salmon is in the oven, chop the vegetables into chunky pieces.

Saute the vegetables in a medium hot pan for 10 minutes or until they are cooked to your liking.

You can bake the vegetables in the oven in the same dish as the salmon, but they need to be checked and the onion turned to prevent burning.
