Meatballs make a handy lunch or dinner. They can be served with roasted vegetables or salad. Alternatively, you can immerse them in a homemade tomato sauce.

Directions for Meatballs

1. Mix together all the ingredients apart from the olive oil.
2. Take dessertspoon sized pieces and form the meat mixture into small balls.
3. Heat the olive oil in a pan and fry the meat balls until fully cooked.
4. Remove from the pan and place on kitchen paper on a warm plate.

Directions for tomato sauce

1. Fry the onion and garlic in the olive oil for a few mins. Do not allow to brown.
2. Add the chopped tomatoes and the herbs, salt and pepper.
3. Cook until the tomatoes are tender and start to break down.

To serve:

• Serve the meatballs with a green salad. Arrange the salad on a place and add the meat balls. Pour the tomato sauce over them. Add lentils for extra health benefits
• Alternatively place the meatballs in a baking dish. Pour the tomato sauce over them. Grate a little parmesan cheese on top and bake at 180C/350F/gas mark 4 until starting to brown on top. Serve with quinoa, lentils or wholegrain rice.
