1/4 tbsp dried/1 teasp fresh Thyme
1/4 tbsp dried/1 teasp fresh Oregano
1 teaspoon, fresh Chopped parsley
1/4 tsp Mustard, powdered

Pinch Salt & Black Pepper
1 tbsp Olive Oil
Tomato Sauce
5 large, roughly chopped Tomatoes
2, finely diced Onion
3, crushed Garlic Cloves

1 teaspoon Chopped Herbs of your choice

Meatballs make a handy lunch or dinner. They can be served with roasted vegetables or salad. Alternatively, you can immerse them in a homemade tomato sauce.

Directions for tomato sauce

1. Fry the onion and garlic in the olive oil for a few mins. Do not allow to brown.
2. Add the chopped tomatoes and the herbs, salt and pepper.
3. Cook until the tomatoes are tender and start to break down.
4. Whiss with a food blender.

To serve:

• Serve the meatballs with a green salad. You could wrap each meatball in a lettuce cup to keep it low carb.
• Add lentils to the tomato sauce for extra health benefits.
• Alternatively place the meatballs in a baking dish. Pour the tomato sauce over them. Grate a little parmesan cheese on top and bake at 180C/350F/gas mark 4 until starting to brown on top.
