4 Large eggsFor a party: If you have 3 other items, allow 1/2 egg per person. If 3 items or less, allow 1 egg per person.

2 tablespoons Natural YogurtI used probiotic yogurt, but you can use any unsweetened type. You could use a good quality mayonnaise instead.

1 teaspoon Dijon Mustard

1/2 teaspoon, very finely grated Lemon zestA microplane is great for this.

Pinch Sea salt & black pepper

4 slices Cucumber

1 Spring onion

This healthy snack couldn’t be simpler to make and there are no fancy ingredients to buy. Great with a salad for lunch or as a healthy party nibble.
The carbohydrate content is extremely low and totally dependent on the yogurt used but most are less than 5 grams per 100 grams, making this snack less than 1 gram.
The lean protein in eggs helps to slow down the digestion of sugar in other foods making this dish a great addition to any party. Place the eggs in cold salted water and boil for 16 minutes. It's important that the yolks are hard but not boiled so long that they are black on the outside. Remove from the heat and crack the shells a little. You can do this by throwing the water and eggs into a clean sink. Run the cold tap over both the eggs and saucepan to cool a little and pop the eggs back into the saucepan. Fill with cold water and leave to cool fully. |

Mix the yogurt, mustard, salt (barely a pinch), pepper and lemon rind. When the eggs are completely cold carefully cut them lengthwise. |

Remove the yolks and mash into the prepared filling. Carefully spoon or pipe the filling into each half egg white. Half the cucumber slices and add one to each. Sprinkle a little sliced spring onion over. |
