
Courgette spaghetti can replace regular spaghetti in any recipe and is an ideal accompaniment to meat, fish or poultry.
Courgettes are blood sugar friendly due to their high water content. They contain potassium, which helps reduce blood pressure. They also contain vitamin C and some of the B vitamins.
Do not peel the courgette. Peeling allows the liquid to seep from the flesh which will result in it becoming soggy. Most of the fiber is contained in the skin.

Bring the stock or water and herbs to the boil. Remove from the heat and add the courgette spaghetti. Allow it to stand for 2 minutes. Leaving it longer will result in it becoming soggy. |

Drain the spaghetti. |

Serve plain or add a squeeze of lemon juice, a little grated parmesan cheese, a tiny drop of olive oil and chopped basil or parsley. |
