1 tsp (optional) Chilli, chopped
Directions
This recipe is healthier than shop bought marinated chicken. You can vary the herbs and add spice if you prefer a spicier version. They are carb free and contain no additives, so they a great choice for lunch with salad or dinner with vegetables. They are also great cold.
12-16 wooden or metal skewers (wooden skewers must be soaked in water for at least a couple of hours, to prevent them catching fire on the BBQ or grill. A short soak isn’t enough).

DirectionsWhisk the lime juice, olive oil, chilli (if using) and the chopped herbs together. Slice the chicken. |

Lay the chicken slices flat in a dish or freezer bag. Pour the marinade over the chicken. Cover and place in the fridge for at least 1 hour for the flavour to develop. Turn over during the marinating time if possible. |

Remove from the fridge and thread the chicken onto the metal or soaked wooden skewers. If you prefer, you can cook the chicken strips first and then thread them onto the skewers. |

Directions to cook on the BBQ or grill or panBBQ: The BBQ coals should be white before you start to cook the chicken. Turn regularly until the chicken is fully cooked. Grill: Turn the grill to a medium heat. Wipe the rack with kitchen paper soaked in olive oil and place the chicken skewers on the rack. Turn regularly until the chicken it is fully cooked. Fry: Heat a little olive oil in a pan and fry the chicken., turning regularly until fully cooked. |

The cooking time will depend on the size and thickness of the chicken. If you are in any doubt, cut one in half and check that the center is cooked before removing them from the heat. Serve with your choice of salad or vegetables. |
