Bunch Rocket & basil leaves

Directions
Caprice salad makes a great starter, a side dish for a BBQ or party, lunch or it can form the base of a more substantial meal. Irish tomatoes are at their best right now. They only contain approx. 4g of carbohydrate per 100g, so are well worth adding to lots of meals this Summer. A mozzarella and tomato salad takes only minutes to make and can be left in the center of the table and everyone can help themselves. Or make a smaller portion for a packed lunch and add green salad and some chopped peppers and olives.

Wash and dry the tomatoes. |

Slice the mozzarella and tomatoes. Optional: If using the pine nuts you can toast them in a dry pan (for approx 30 seconds) for extra colour and flavour, but they are fine untoasted too. |

Layer the cheese and tomato on a serving plate. Add the pine nuts if using. |

Make a ball of the basil leaves and rocket in your hand and place in the centre of the mozzarella and tomato. |

Sprinkle with olive oil, salt and pepper and serve. |
