Homemade beef burgers are so much nicer and healthier than shop bought ones. You will never eat processed ones again once you have tasted these. They are almost carb free, so if they are eaten with non-starchy vegetables or salad very little or no insulin will be required.

Artisan Note: Use whatever type of mustard you have.

Burgers should always be cooked on the day they are made. They are great cold the next day, with salad and wholemeal bread or a wholemeal wrap.

Directions

Saute the onion and red pepper in the olive oil for 10 minutes., until soft but not brown. Set aside to cool.

Add the chopped bacon to the pan (if using). Saute until cooked but not brown. Set aside to cool.

Blitz the onion and red pepper in a food processor until smooth. When the onion mix is completely cold add to the meat.

Add the chopped rashers (if using), the salt, freshly ground black pepper, herbs, mustard and a dash of Worcestershire sauce. Mix well.

Assembly

Form into burgers. Handle the meat quickly. Over handling can make the burgers tough and the burgers shouldn’t be kept out of the fridge for any longer than necessary. Cover and place in fridge (for 2 hours if possible).

Directions to cook on the BBQ

The coals should be white before you start to cook. Wipe the rack with kitchen paper coated in olive oil and place the burgers on the rack. Allow the burgers to cook on one side before turning over.

When the second side is brown, turn over once again for a few minutes to ensure the burgers are cooked.

The cooking time will depend on the size and thickness of the burgers. If you are in any doubt, cut one burger in half and check that the center is cooked before removing them from the BBQ. Serve with plenty of salad.

Directions to cook in the pan

Heat olive oil in a pan and fry the burgers for about 6 to 7 minutes each side, on a medium heat until they are fully cooked. The cooking time will depend on the size and thickness of the burgers. You can check if they are cooked by cutting one burger in half. There should be no pink meat in the center.

To cook under the grill

Brush each burger with a little olive oil to prevent them from sticking to the grill rack.
Grill under a medium heat for 6 to 7 minutes each side until they are fully cooked. The cooking time will depend on the size and thickness of the burgers.

Serve

Serve the burgers with salad and/or vegetables. Avocado and tomato are particularly good with beef burger.
