When we think of a BBQ, we automatically think of meat, but have you thought of having fish at your next BBQ?Salmon is a great lean protein & contains healthy Omega 3 fatty acid. As well as being heart healthy, this fatty acid helps to slow the rate of which sugar in other food affects our blood sugar.

Fish is quick to cook on the BBQ, oven or grill.

Skewers

If you are using metal skewers no preparation is necessary. Wooden skewers have to be soaked in water for at least a couple of hours, to prevent them catching fire on the BBQ. A short soak isn’t enough.

Prepare the fish

1. Wash the salmon and dry on kitchen paper. Remove any visible bones.
2. Place in a bowl or freezer bag.
3. Whisk the olive oil. Lemon juice and black pepper together.
4. Pour this marinade over the fish and place in the fridge until you are ready to cook them on the BBQ

The BBQ

1. Slide the fish on to the skewers.
2. The coals should be white before you start to cook. Wipe the rack with kitchen paper coated in olive oil and place the loaded skewers on the rack.
3. Allow the fish to cook on one side before turning over.
5. The cooking time will depend on the size and thickness of the fish. Remove it from the grill as soon as it has changed colour all over, so that it retains in moistness.
